After more than a year of planning, sourcing, brewing, and ageing, the first two releases from Amity Brew Co’s Spinning Mill Barrel Project are now live.

These are two imperial stouts, one aged in a former Heaven Hill bourbon barrel, the other in an Islay whisky barrel which had contained bourbon.

The base stout was brewed with seven different malts for a complex taste and texture, to which was added a 25kg of muscovado sugar. “This is a deliciously silky stout, sweet and roasty, with notes of raisin and dark fruits,” says the brewer.

The first beer has spent six months in the Heaven Hill barrels, which has added oak, vanilla, maple and spicy flavours. The second has massive peaty and smokey flavour and aroma.

The beers are available here in what Amity describes as “incredibly limited quantities”. Each bottle has been hand finished, first dipped in wax, and then individually numbered.
