Northern Monk is releasing a limited number of bottles of its ‘wild beer’ project brew, Northern Wild 002.

Just over 30 months ago, Northern Monk embarked on a project that explores and pays homage to brewing traditions of barrel fermenting, bottle conditioning, and wild strains of yeast.

It brewed a wort fermented with saison yeast, funnelled it into seven former white wine barrels, and added two strains of Brettanomyces and two strains of lactic acid producing bacteria.

Starting last November, it began decanting the mixed fermentation saison into bottles, conditioning half with Brettanomyces yeast and half with Champagne yeast. These are Northern Wild 001 and Northern Wild 002.

“We bottle conditioned 002 with Brettanomyces yeast to promote some of the funkier brett flavours that are characteristic of brett yeast,” says the brewer. “The result is drinkable and refreshing, with a balanced sourness.”

Each bottle has been numbered and signed with brewer approval to mark this next step in the Northern Monk journey, and the brewery has also developed Northern Wild glasses to make the first sip extra special.

“We have an extremely limited number of bottles available in this project, so please note, due to very limited stocks, Northern Wild 002 is restricted to two bottles per order.”
