DEYA is releasing three mixed fermentation beers which have been made in collaboration with Little Pomona Cidery.

The base beer is very similar to DEYA’s Spinning Away (or barrel-aged Simple Wheat Thing), but it was fermented with lees from a Little Pomona fermentation.
That means that the only micro-organisms which ferment and create this beer are those found on the skins of the apples from Little Pomona.
“It’s a little wild, definitely has echoes of their cider, and was a lot of fun to collaborate in that way,” says DEYA.
One beer — See No Evil — is being released ‘naked’. Another — Speak No Evil — has been aged on pomace from Dabinett apples. And another — Hear No Evil — has been made using the pomace from perry pears.
Pomace is the skin and pulp of the fruit. It is what remains after the juice has been squeezed out to make Little Pomona cider. The pomace doesn’t have a lot of sugar, but still has a bounty of flavours.
