Dorking Brewery

Carbon negative Dorking Brewery is celebrating continued growth, gaving now brought its kegging and bottling operations in house.

Last November, a new 50hl brewery was commissioned so that cask ale production could keep up with demand. This year has continued to see double-digit growth and the new kit now keeps pace. Quality and efficiency have substantially increased.

Lead brewer, Ted Carey, said: “We enjoy dry hopping some of our beers and when we mention a hop, there is enough in there to taste it. So for some of our styles the keg format is perfect — it really allows the hops to shine.

“Our cask ale customers demand clear beer, but the kegs are unfined and unfiltered, keeping all the flavour in the beer. The added bonus is that these beers are now vegan friendly.”

Brewery owner, Neel Singh, added: “We decided on metal kegs for several reasons. Reusable kegs are more environmentally friendly and we feel they offer greater consistency at present.

“The choice of bottles over cans was more difficult. Maybe cans are the future, but the bottling line gives us much more flexibility for quick, short runs and different sizes. It is a format that sits equally comfortably in a bar or an off-licence or a local farm shop.”
