Harbour Brewing Co has officially re-opened the St Tudy Inn, in North Cornwall, with Siaka Touray in charge of the kitchen.

Harbour took over the pub back in the summer, opening the bar just for drinks to quench the thirst of locals and visitors alike while it recruited the right team to fulfil its vision.

Managing director, Eddie Lofthouse, said: “We’re excited to finally be re-opening this beautiful village pub and its boutique accommodation. Located at the heart of the St Tudy community, it holds a legacy as a real foodie destination, and we now have a fantastic team in place to deliver the outstanding, local but accessible, food offering we’re striving for here.

“Our experienced head chef has been working hard to create our unique menus, which will pair well with our own Harbour beers and extended drinks list.”

Siaka joins the pub with an impressive background in hospitality, working at Harvey Nichols’ Fifth Floor Café for ten years, as well as other London establishments, before relocating to Cornwall in 2014. He has worked for Rick Stein, and has most recently been the head chef of Pilchards at Port Gaverne.

Pub classics

He said: “We’ve designed the menus to have some of the classics you’d expect from a rural country pub, but with a modern twist which will be unique to the St Tudy Inn.

“Our team is ready to go with some great dishes we think our diners will love, and we’re proud to be championing local Cornish produce throughout.”

The main menu will feature braised pork belly, Harbour battered cod, rib-eye steak, whole baked Cornish sole, and a sticky toffee pudding with clotted cream. Bar snacks include ‘nduja scotch egg, scampi with tartar sauce, pigs in blankets with honey and mustard, and goat’s cheese bonbon with squash and sage, as well as a club sandwich and a Cornish cheese toastie.

Diners can celebrate the festive season at St Tudy Inn this year, with a three-course Christmas party and New Year’s Eve set menus available.

The pub also has four en-suite rooms for bed and breakfast, and has plans to convert two more rooms above the bar in the new year.
