The Gales strain of yeast has been utilised in Fuller’s new seasonal ale, Redwood, which will be available in cask only.

Fuller's RedwoodRedwood is, as the name suggests, deep red in colour with the yeast contributing to a rich and fruity red berry flavour. Depth comes from three types of malt: pale ale, rye crystal and imperial.

Two types of Australian hops have been used. Galaxy adds punchy passion fruit characteristics and fresh citrus-like aromas, while Pride of Ringwood provides a hint of spice in the finish and more bold, fruity flavours to make the beer more robust than its 4% ABV may suggest, says the brewer.

Brewing manager, Georgina Young, said: “We’re excited that our seasonal calendar has this new addition to it, and it hasn’t gone unnoticed that although Pride of Ringwood hops are from the other side of the world, Ringwood is a market town in Hampshire, not far from Gales home.”
